Description of Proposed Guidance Document Changes
While the Food Regulations (12VAC5-421-et seq.) provide general standards related to food establishments, outdoor cooking operations present unique challenges associated with the type of cooking equipment and infrastructure proposed to be utilized outdoors. The proposed policy, ENV(F)-2020-1, provides staff, as well as the regulant population, guidance to control and minimize the contributing factors of foodborne disease when operating an outdoor cooking operation at a food establishment (restaurant).
