I am all for anti-bullying, treating other with respect, etc, and I teach those ideals to my children. That being said, I do not think it is appropriate that children can sit down with a school team and decide to change their gender/pronoun/name/etc in student information systems without the approval of a parent. Be who you want, experiment, do what you need to do, but taking those rights away from parents is incredibly inappropriate. When a child turns 18, they are a legal adult and can change what they need to. Until then, children are minors, and parents should be required to sign paperwork or change gender/name/pronoun/etc.
